A Meal of Herbs

“Better a meal of herbs where there is love than a fatted ox where there is hatred” (Proverbs 15:17). Relating to who did King Solomon refer to in this verse? It was two men he met.

During the time when he lost his kingdom and went begging from door to door in order to eat, two men met him and recognized him. One of them came, bowed down before him, and said, “My lord king, please join me in a meal today.” He went with him at once, and the man led him to an upper floor and prepared an ox and brought all kinds of fine food before him and began telling Solomon all about his kingdom, saying, “Do you remember how you ruled with kindness and wisdom when you were the king?” As soon as he reminded him of his days of royalty, Solomon the king began to weep as his heart ached and this went on throughout that meal until he rose and went away, filled with his tears.

The next day another man met him, bowed down before him, and said to him, “My lord king, would you care to share a meal with me today?” King Solomon answered him, “Do you wish to treat me as your friend did yesterday?” “My lord king,” the man answered, “I am a poor man, but I would be honored f you would share a meal with me today of the few herbs I have.” So he went to his home, and the man washed his hands and feet and fetched him some herbs. Then the man began consoling King Solomon saying, “My lord king, the Holy One, blessed be He swore an oath to your father that He would not deprive his seed of royalty. But such is the way of the Holy One, blessed be He as He rebukes and rebukes again, as it is written ‘For whom the L-rd loves, He rebukes, as a father his son for whom he cares’ (Proverbs 3:12). Yet the Holy One, blessed be He will restore you to your kingdom.”

As soon as King Solomon heard this, he felt at ease and rejoiced in that meal of herbs and rose from it feeling he had eaten his fill.

When Solomon returned to his royal throne, he wrote in his wisdom: “‘Better a meal of herbs where there is love’, which I ate with the poor man, ‘than a fatted ox where there is hatred,’ which I was fed by the rich man who reminded me of my grief,”

Yevreysky Salat – Russian Jewish Salad

1 lb. cabbage sgredded (about ½ a medium cabbage)

1 small onion (red or yellow) thinly sliced

2 medium carrots shredded

3 Tbsp oil (olive, avocado, or vegetable)

2 Tbsp water

1 red or green bell pepper thinly sliced

1 medium cucumber thinly sliced

2 Tbsp apple cider vinegar

1 Tbsp white distilled vinegar

2 Tbsp sugar, or to taste

6-7 small radishes thin

Directions

Combine all of the shredded and sliced vegetables together in a large bowl. Season with salt and toss until everything is coated.

For the dressing, whisk together the water, apple cider vinegar, white vinegar and sugar. Let the sugar dissolve for a few minutes, then whisk the oil into the vinegar mixture. Pour the dressing over the vegetables and toss the salad. Refrigerate for at least 30 minutes before serving. Taste prior to serving; season with more salt if necessary. The salad keeps for up to a week in the refridgerator but will soften more each day.

The Taste of the Garden of Eden

Tam and Chacham were old friends and would frequently travel together to perform various mitzvos and to collect tzedakah for special causes. They both had many students and were repected everywhere they journeyed.

Once, Chacham went to the home of Tam to begin their journey to a faraway village, Tam, wanting everything to begin with a blessing, told his wife,Chana to prepare some­thing to eat quickly so he and Tam could set out on their holy mission.

Now, Tam and his wife were very poor. They had nothing in the house, not even wood for the stove! All Chana had in the way of food was a little bit of flour. How could she pre­pare a meal for her husband’s holy friend who was coming to their home for a meal? So she went out into the field to gather some wood chips for the stove and brought them home. Chana then mixed the flour with some water, without any fat or spices, and served this meager meal to her husband and their guest. After the meal, the two set out on their journey.

When Chacham returned home from their successful trip collecting to marry off an orphan girl, he told his wife that Tam’s wife made the most delicious dish he had ever eaten. In fact it actu­ally had the taste of the Garden of Eden.

Chacham’s wife, Ita Shaidel, knew how far her holy husband was from relishing simple earthly plea­sures, heard that, she hurried to see Chana to learn the se­cret of her cooking. When she arrived at the home of Tam and Chana she asked her, “With what did you season the food you served my husband? He said that it was the most delicious food he had ever eaten, that it had a taste like the Garden of Eden!”

Chana told Ita Shaindel that she really had nothing to serve or anything with which to season the food. But while she was preparing her simple meal, she was praying, “Ribbono Shel Olam – Master of the world, You know that if I had something to serve, I wouldn’t spare a thing to give to this holy rabbi! But what can I do? We don’t have anything in the house! So I’m pleading to You to add savoury spices to this dish I’m making so that Chacham will enjoy my food.” And she continued to pray this way until the food was prepared. “So it seems that the Holy One, blessed be He an­swered my prayer,” she said. “And your husband tasted the flavor of the Garden of Eden in my food.”‘

What gives food its taste is not its physical appearance alone but its spiritual elements. So many people praise their religious leaders by saying that they were so holy, so ascetic, they did not even taste their food. What is true is that many religious leaders are the only ones who really taste the food they eat! Why? Because they don’t just taste the food itself; they taste the holiness in the food, or as this tale puts it, they taste the Garden of Eden. Food served and offered with love tastes of love. Chana put her devo­tion to the Holy One, blessed be He and His servants into the dish she prepared, and Tam and Chacham were on a spiritual level to taste it.

Matzo Meal Pancakes Chremslach

INGREDIENTS

1 cup matzo meal

6 eggs

2 teaspoons salt

1 1/2 cups water

2 tablespoons sugar

3/4 cup grated onion (optional)

3/4 cup corn oil for frying

DIRECTIONS

Step 1

In a large bowl, combine matzo meal, salt, and sugar. Set aside.

Step 2

Separate egg whites and yolks. Beat egg yolks, and combine with water. Add the yolk mixture to the matzo meal mixture, and let it stand for 30 minutes.

Step 3

Beat egg whites until they are stiff, and fold them into the matzo meal mixture. Add grated onion.

Step 4

Heat corn oil until it sizzles in a deep skillet. Lower heat, and, using a cooking spoon, spoon batter into the pan, creating thin pancakes 3 to 4 inches in diameter. Fry for several minutes, turning when the pancake is firm and the bottom side is golden brown. Fry for another few minutes until the other side is done. Drain on paper towel.

Serve with cinnamon-sugar, applesauce and/or sour cream.

The Magic Ingredient of Love

There is a special connection between the manna that fell in the desert during the 40 years of wandering and Shabbos. There is a mystical quality within our means that can affect how we taste our food – that quality is love.

The manna was an extraordinary gift from the Holy One, blessed be He as it is recorded that He said, “Even before I gave you the mitzvos (10 Commandments) I provided their reward, (Exodus 16:5) ‘On the sixth day, when they prepare (for the holy Sabbath Day) what they bring in, it will be twice as much as they gather on other days.”. (Mekhilta d’Rabbi Yishmael 19:2)

The very nature of the manna was unique to meet the tastes of every individual. We learn that, “Rabbi Yose bar Chanina said, “If you wonder about this thing, learn from the manna, as it would only come down according to the strength of each and every one of Israel: the young men would eat it like bread, as it is stated (Exodus 16:4), ‘Behold I will rain upon you bread from the skies, etc.’; the elders like a wafer in honey, as it is stated (Exodus 16:31), ‘and its taste was like wafers made with honey’ the sucklings like the milk of it’s mother’s breast, as it is stated (Numbers 11:8), ‘and its taste, was like the taste of, etc.’; the sick ones like fine flour mixed with honey, as it is stated (Ezekiel 16:19), ‘And My bread that I gave you, fine flour and oil I fed you’; and the idolaters tasted it bitter and coriander, as it is stated (Numbers 11:7), ‘And the manna was like coriander seed.’ “(Midrash Exodus Rabbah 5:9) The Holy One, blessed be He prepared the people with the physical and spiritual energy to receive the Torah as they stood at the foot of Mount Sinai, Rabbi Yose bar Rabbi Chanina further said, “And since the manna which was one type switched to many types because of the need of each and every one, all the more so, the voice that had strength in it would change for each and every one, so that that they would not be injured, as it is stated (Exodus 20:18), ‘And all the people saw the voices.’” (Midrash Exodus Rabbah 5:9)

There was a man in the village who always seemed to be in good spirits. When Friday came he seemed to be surrounded by a holy light. Many would ask, “How can such a poor man be so happy?” Others wondered, “Is he so spiritual a person that his face should shine in this manner?”

In the village was a student who watched the poor man, who appeared to have no worries. One Friday evening, as the sun was setting and Shabbos was about to begin, he decided to follow him home and maybe learn the secret of the poor man’s cheerfulness.

The man entered a small hut with a battered old door and greeted his wife with a hearty “Good Shabbos!” Looking through the window, the young student saw very little furniture that reflected the poverty of the household. A wooden table was covered with a plain white cloth, and the two candles shed a warm glow. The man sang Shalom Aleichem, welcoming the angels to bring peace into his house for Shabbos. He looked at his wife, dressed in a plain blue dress with a lace collar, and smiled. He then sang Eishes Chayil (a Woman of Valor – Proverbs 31: 10-31). His wife seemed to be surrounded by a special light – the Shabbos Kallah (bride). Then he said to his wife, “Please bring the special wine.”

The wife brought two loaves of course, dark bread. He washed his hands and recited the proper blessing, then chanted the Kiddush – the blessing recited to sanctify the Sabbath Day. (If one has no wine, one may recite the Kiddush on bread.) After he ate some of the bread and offered some to his wife, he said, “We have never yet had such a fine wine! Can you please bring in the fish?”

Moments later, the wife served him a small portion of beans. “Mm!” he exclaimed, smacking his lips. “This fish is unusually delicious.” He sang a Shabbos song and said, “I’m ready for the soup.” The wife appeared with another dish of beans. The man complimented his wife, “This soup is exceptionally good.” He sang another Shabbos song and asked, “Can we have the roast meat and tzimmis?” His wife brought in a steaming dish. “How wonderful the roast meat and tzimmis are,” he said with a smile.

The young student reflected on all he had seen and heard, thinking, “The generation that wandered in the desert had the manna, a food from heaven, in which they could taste anything they wished. This man’s love for the Holy One, blessed be He, for Shabbos, and for his wife have enabled him to reach a level of spirituality so lofty that he can taste the finest delicacies in the simplest of foods.”

Is such a level of spirituality attainable? It is, but few realize the blessing as it is written, “Yet he commanded the skies above, and opened the doors of heaven; He rained down on them manna to eat and gave them the grain of heaven. People ate of the bread of angels; he sent them food in abundance.” (Psalm 78: 23-25)

May we all experience the love and joy that comes with Shabbos.

Tzimmes

Tzimmes

2 sweet potatoes cut into thin slices

½ cup packed brown sugar

2 potatoes cut into thin slices

1 tablespoon ground cinnamon

2 medium carrots, cut into 1/2-inch slices

2 teaspoons ginger

2 Granny Smith Apples

¼ teaspoon cloves

2 Granny Smith Apples,sliced

¼ teaspoon nutmeg

1/2 Cup Golden Raisins

1/8 – 1/4 teaspoon kosher salt

½ to ¾ cup orange juice

1/8-1/4 teaspoon pepper

1 cup water

5-8 tablespoons margarine or shmaltz

½ cup honey

1. Preheat oven to 350°.

2. Grease a baking dish or Dutch oven

3. In a bowl, combine sweet potatoes, carrots and apples. Combine orange juice, water, honey, brown sugar, 1- 2 tablespoons margarine or shmaltz and spices; mix into vegetables.

4. Cover and bake for 2 hours or longer. Uncover; dot with remaining margarine or shmaltz.

5. After first hour, uncover and stir every 2o minute to prevent sticking.

6. Vegetables should be tender and sauce is thickened when done

The Little Pot and Mamaliga

Once there was a poor little girl who was so filled with faith, and she lived alone with her mother. Sadly, their cupboard was bare and many times they had little to nothing to eat. One day, the little girl went into the forest in search of berries, nuts, and good herbs. An old woman appeared from nowhere and gave the little girls such a start. She knew of the girl’s sadness, and gave her a little pot, which when she said, “kleyneh top, kleyneh top kochn,” and the little pot would cook good, savoury mamalige, and when she said, ” kleyneh top, kleyneh top g’endik,” it stopped cooking.

 

The little girl took the pot home to her mother, and they no longer suffered from poverty and hunger, and ate savoury mamalige as often as they chose. One day when the little girl had left the house, her mother said, ” kleyneh top, kleyneh top kochn.” And it did cook, and she ate until she was full, and then she wanted the pot to stop cooking, but did not know the word. So, it went on cooking and the savoury mamalige rose over the edge of the little pot, and still it cooked on until the kitchen and whole house were full, and then the next house, and then the whole street, just as if it wanted to satisfy the hunger of the whole world. It was terrible, and no one knew how to stop it. At last, when only one single house remained, the child came home and just said, ” kleyneh top, kleyneh top g’endik,” and it stopped cooking, and anyone who wished to return to the town had to eat their way back.

Mamaliga
Mamaliga is so popular a dish that it was mentioned in the Yiddish song Roumania, Roumania:

“Dort tsu voynen iz a fargenign
vos dos harts glust dir vost kentsu krign
a mameligale, a pastramele, a karnatseleun a gleyzele vayn, aha!”

“To live there is a pleasure
What your heart desires you can get
A little mamaliga, a little pastrami, a karnatzl (sausage kosher of course), and a glass of wine, aha!”

Savoury Mamaliga

Ingredients

1 tbs Italian spices

3 cups water

1 onion, diced

1 cup corn meal

¼ cup margarine

Juice of 1 lemon

kosher salt

Pepper to taste

Directions

Whisk cornmeal together with 1 cup of cold water in a medium bowl and set aside. Bring remaining water to a boil in a medium pot. Turn heat down to low, add Italian spices, onion. Let boil 5 – 10 minutes then add cornmeal liquid.

 

Cook, stirring constantly, until mixture thickens and begins to pull away slight from the sides of the pot, 7 – 10 minutes. Turn off heat; stir in margarine and salt and pepper to taste. Place in an oiled bowl and allow to cool.

 

Turn bowl upside down on to serving platter. Slice or spoon to serve

A Special Drink for a Special Time

This will be the greatest event the city of Aleppo has seen in many years,” Moshe said to his wife, Penina. “People will talk about this Arayat — Memorial Service in honor of my father — for many years to come.”

The entire town was invited. On Shabbat, Moshe’s house was filled with people. They stood in every corner and they sat on every chair. “Did you ever see so much food on a table?” one person asked the next. “I tasted food that I have never ever seen before,” someone else stated in wonder.

But most exciting of all was the holy Chacham, a famous scholar and kabbalist. He was sitting right there at the head table.

One of the delicacies at the table was sahlab, a special drink made with milk and orchid flavor that is hard to find. The Chacham tasted all the other food set before him, but ignored the sahlab.

“Chacham, please taste this delicious sahlab,” said Moshe. “I am sure that you’ve never tasted anything as good in your whole life.”

The holy Chacham said nothing and just took samples of the other food on the table.

“Why have you not tasted the sahlab?” asked Moshe.

The Chacham replied, “I know you are showing me sahlab, but I cannot see it — as if it is invisible. I sense that something is wrong with it.”

Trusting the words of the Chacham, no one touched the sahlab.

Sunday morning, Moshe went to the farm where he had bought the milk for the sahlab. “Can you please give me more of the milk I bought here the other day?” he asked the farmer. “It was so delicious.”

“I would love to,” said the far mer, “but I cannot. When I began filling up
your bottle of milk, I realized that I did not have enough milk from my cow.

So I added So I added milk from a donkey to fill the bottle to the top. I am sorry, but that donkey is not here now”

Moshe then understood the holiness of the Chacham. He knew that the sahlab contained milk from a non-kosher animal, and therefore, was not kosher.

Moshe learnt his lesson. He would never again buy milk that wasn’t milked under Jewish supervision.

Sahlab

Sahlab Recipe

Sahlab is a powder that is made from the tubers of a kind of orchid flower that is unique to the region. Some of the fragrant ingredients used in this delicious dessert drink are pistachios, rose water, orange blossom, cinnamon, nutmeg, cloves and many more — all giving it a distinctive Middle Eastern touch.

INGREDIENTS

4 cups Milk

1 tbsp Sahlab (or 4 tbsp cornstarch)

1 cup Sugar

1 tbsp Rose water

Cinnamon (garnish)

INSTRUCTIONS

 

Combine sahlab or cornstarch and water in a small cup and stir well.

 

Add milk to a sauce pan or dutch oven pot.

 

Stir in sahlab mixture in milk before it gets warm.

 

Add in rose water and sugar.

 

Stir and bring to a simmer, and keep stirring until thickened. Allow to boil for 2 minutes, while still stirring.

 

Transfer to dessert bowls or mugs and sprinkle with cinnamon and pistachios.

Kishke and Teshuvah

Two kings from neighboring kingdoms once met and shared a meal together. A state dinner with many delicacies was served. One of the items on the menu was kishke. Traditional kishke is actually the intestines of a kosher animal stuffed with matzah meal and oil/schmaltz/fat and all sorts of spices. It is a special dish on the Shabbos (Sabbath) table and many times served in cholent.

Kishke was served at the royal dinner and the visiting king loved it. He asked his host to send the recipe to his royal kitchen. The hosting king graciously promised to do so. After the visiting king’s departure the royal cooks wrote down the recipe and sent it by a special messenger to the neighboring king’s chefs.

The day finally came when the king was told that he would be served kishke at the dinner meal. He sat down hungrily. Out came a tray, but a foul odor came from the tray. The smell was almost overwhelming. With great anticipation the king took off the cover from his plate and took a bite. He immediately spat out the piece and ordered the tray removed and the kishke thrown away.

A letter of official protest was immediately dispatched to the king who sent the recipe. How dare he send a recipe for such a vile food! The king received the distressing letter and summoned his cooking staff for an explanation.

Initially, the royal kitchen staff was confused. They went over the recipe and could not find the problem. After quite some time and in a moment of inspiration, one of the junior cooks observed, “We told him how to stuff and spice the kishke, but we never realized that we needed to tell him to clean it out before he stuffs it!”

This story is about teshuva (repentance). Many people wanting to do teshuvah and change their lives begin to think more and more about ways to improve. They give tzedakah (charity), pray earnestly and do good deeds. Surely good deeds are important in the process of change. Teshuvah/repentance is best when a person takes an honest assessment of oneself in order to correct any areas in their behavior that need fixing. Otherwise even with all of the spices (good deeds) in the world, a person may remain a stinking kishke…

Kishke Kishka

KISHKE

This is a versatile recipe. If using oil, the Kishke is pareve. If using shmaltz, the Kishke is fleishig. For Pesach/Passover delete the flour and use only matzah meal. For Pesach/Passover one could use ¾ cup of cake meal and ¾ cup of matzah meal

INGREDIENTS

2 stalks celery with leaves, chopped

½ cup vegetable oil or shmaltz

1 carrot, grated

1 1/2 cups whole wheat flour or matzah meal

1 large onion, chopped

2 teaspoons paprika

1 teaspoon salt

½ teaspoon ground pepper

DIRECTIONS

Blend all ingredients except the flour/matzah meal and paprika in the blender. Do not blend too smooth: a coarse texture will make a more interesting kishke.

When blended, add the flour/matzah meal and paprika. Spoon half of the mixture onto a large piece of heavy duty aluminum foil. Shape like a cylinder. Fasten the foil securely at the top and the sides. Do the same with the other half of the mixture.

Place both rolls on a baking sheet (there might be some leakage). Bake in a 350-degree F. oven for 45 minutes. Carefully turn the kishke rolls over (to prevent burning on one side) and bake for approximately 45 minutes more. If additional browning is desired, turn the kishke rolls over once again and open the foil a bit. Remove the foil, slice, and serve.

The Blessed Shalom Bayis Kugel

The holy rabbi’s wife was extremely thrifty, but very spiritual. When she davened (prayed), she was transported into another world.

The rebbetzin would put the bare minimum of schmaltz (chicken fat) into the kugel. The holy rabbi would always ask her to increase the amount of schmaltz in the kugel. His requests went unheeded.

One Friday, when the rebbetzin was davening, The holy rabbi removed the keys from her apron pocket, unlocked the pantry, and put several spoonfuls of schmaltz into the kugel. He then returned the keys, and the rebbetzin was completely unaware to all of this.

Shabbos morning, when she served the kugel, the rebbetzin said, “See! You always criticize me for not putting enough schmaltz into the kugel. But look at the Divine blessing. The kugel is dripping with schmaltz!”

The holy rabbi nodded. “It is indeed a Divine blessing,” he said. “We merited this blessing by virtue of deine shtark tefillos un meine maasim tovim — your fervent davening and my good deeds.”

Potato kugel

 

Overnight Potato Kugel

 

INGREDIENTS:

3/4 cup schmaltz or oil

1-2 medium onion, grated

8 extra large eggs

1 Tablespoon Kosher salt

5 lbs. potatoes, grated

¼ – ½ teaspoon pepper, or to taste

DIRECTIONS

Heat oil in pan on medium heat (do not allow oil to get real hot)

Grate potatoes and onion (or use a food processor, process the potatoes and onions until almost smooth but not liquidy). Add to the eggs along with salt and pepper.

Carefully remove the hot pan from the oven. Pour the hot oil into potato-egg mixture and mix until fully mixed.

Pour mixture into the pan and bake at 400° until the top is brown, about 1 hour.

Remove from the oven. Reduce oven temperature to 200°. Cover the kugel tightly with foil.

Return pan to the oven. Place a pan of water (cold) on the rack underneath the kugel and continue baking at least 4 hours or overnight.

The Delayed Dinner and Shalom Bayis

“A man comes home from work at the end of the day, very hungry. He sits down at the table, expecting his dinner. His wife appears and tells him that he should be patient because dinner is delayed. So he waits.

“After waiting for what seems like an eternity, she places a plate before him. He takes a look, and all he sees is a hard-boiled egg and a potato. Needless to say, he is quite perturbed. Here he waited patiently although he was so hungry, and all he gets is just plain old food, nothing special. Had he gotten something special, then he would have understood the delay. He leaves the table disappointed.

“Every morning, G‑d waits for His people to say their prayers” The diligent are quick to pray, aware of the immense privilege it is to be able to address the King above All kings.

“If one prays on time, then even if the prayers are not recited with the greatest concentration, the fact that they are recited on time makes them desirable to G‑d. When the prayers are said a bit late, but with great concentration, G‑d desires them as well, the extra devotion making it ‘worth the wait.’ However, if the prayers are late and without proper concentration, they are like the simple meal that the husband in the parable received. G‑d can be expected to look skeptically at such an offering!”

An old Jewish man who listened very carefully as the story was told. “With all due respect, holy rabbi,” he countered, “the husband’s reaction would be a harsh one if there wasn’t true harmony in the home. However, when a husband and wife really love each other, they understand when the other has a hard day. Perhaps the end of the parable should be that the husband graciously thanks his wife for the simple meal, and asks her to tell him about her day. In this way, G‑d is always ready to hear our prayers . . .”

Kugel

Vegetable Kugel

 

Ingredients:

2 large onions, diced

6 eggs

3-4 Tablespoons oil or shmaltz

1 Tablespoon salt

4 stalks celery, diced

½ Teaspoon ground black pepper

2 green peppers, diced

1 Tablespoon of Italian spices

1/2 lb. mushrooms, sliced or chopped (optional)

1/8 – ¼ Teaspoon Cayenne pepper (optional)

4 carrots, shredded

8 large potatoes (4-5 lbs.), grated

Directions

1.

Preheat oven to 375°.

2.

Sauté the onions in oil until golden. Add the celery, peppers, mushrooms (if using), and carrots. Sauté until soft.

3.

Place the eggs into a mixing bowl. Beat by hand and add salt and pepper to taste.

4.

Continue beating and add spices.

5.

In a food processor or by hand using a box grater, grate the potatoes using the fine shredder. Transfer to the egg mixture. Add the sautéed vegetables. Mix thoroughly.

6.

Pour into a 9″x13″ pan. Bake for 40-60 minutes, until browned and crusty.

Rosh Hashanah Cholent (Stew) – A Story and Recipe

The story is told of a simple Jewish innkeeper who kept an inn on a distant crossroads many weeks’ journey from the nearest Jewish community, who one year decided to make the trip to the Jewish community for Rosh Hashanah.

When he entered the shul (synagogue) on Rosh Hashanah morning, it was already packed with worshippers, and the service was well underway. Scarcely knowing which way to hold the Machzor (holiday prayer book), he draped his tallis over his head and stood against the back wall where no one would notice him.

Hours passed. Hunger was beginning to gnaw at his insides, but the impassioned sounds of prayer around him showed no signs of lessening. Visions of the sumptuous holiday meal awaiting him at his lodgings made his eyes water in pain. What was taking so long? Haven’t we prayed enough? Still the service stretched on.

Suddenly, as the chazzan (cantor) reached a particularly stirring passage, the entire congregation burst into tears. Why is everyone weeping? Wondered the innkeeper. Then it dawned on him. Of course! They, too, are hungry. They, too, are thinking of the elusive meal and endless service. With a new surge of self-pity he gave vent to his anguish; a new wail joined the others as he, too, cried from the depths of his heart.

But after a while the crying let up, finally quieting to a sprinkling of exceptionally pious worshippers. The hungry innkeeper’s hopes soared, but the prayers went on and on. Why have they stopped crying? He wondered. Are they no longer hungry?

Then he remembered the cholent. What a cholent he had waiting for him! Everything else his wife had prepared for the holiday meal paled in comparison to that cholent. He fondly remembered the juicy chunk of meat she had put into the cholent when she set it on the fire the previous afternoon. The innkeeper knew one thing about cholent: the longer it cooks, the more enjoyable the cholent. He’d looked under the lid on his way to shul this morning, when the cholent had already been going for many hours. It smelled so good. Give it another few hours, and ahhhh. . . A few hours of aching feet and a hollow stomach are a small price to pay considering what was developing under that lid with each passing minute.

Obviously, that’s what his fellow worshippers are thinking, as well. They, too, have a cholent simmering on their stovetop. No wonder they’ve stopped crying. Let the service go on, he consoled himself, the longer the better.

And on the service went. His stomach felt like raw leather, his knees grew weak with hunger, his head throbbed in pain, his throat burned with suppressed tears. But whenever he felt that he simply could not hold out a moment longer, he thought of his cholent, imagining what was happening to that piece of meat at that very moment: the steady blending of flavors with the potatoes, barley, kishke and spices in the pot. Every minute longer, he kept telling himself, is another minute on the fire for my cholent.

An hour later, the cantor launched into another exceptionally moving piece. As his tremulous voice painted the awesome scene of divine judgment unfolding in the heavens, the entire shul broke down weeping once again. At this point, the dam burst in this simple Jewish innkeeper’s heart, for he well understood what was on his fellow worshippers’ minds. “Enough is enough!” he sobbed. “Never mind the cholent! Hashem forgive everyone for their weaknesses and untoward behavior. It’s been such a long time, shower the world with blessings and let us go home.

At last the service was over and the simple innkeeper joined his wife and enjoyed the Rosh Hashanah cholent.

Rosh Hashanahdike Zisseh Kartofl Cholent

Ingredients:

2 medium onions, chopped

1 cup barley

2-4 cloves garlic, minced

½ tbs coarse black pepper

olive oil (for sautéing)

1.5 lb. boneless shank, flanken or the kosher meat of your choice cut into  pieces

2 tbsp. salt

4 medium potatoes, peeled and chopped

2 sweet potato, peeled and chopped

2 tbs . paprika

2 tbs honey

1 lb kishka

Directions:

  1. Sauté the onions in oil until golden. Add the meat and brown on all sides.

  2. Add the potatoes, barley and sweet potatoes.

  3. Transfer the meat and onions to a crockpot

  4. In 1 cup of water mix honey and spices.  Cover with water.

  5. Wrap the kishka in foil and set on top of cholent

  6. Turn the crockpot onto before Rosh Hashanah begins, set the heat to low. Cook on low heat overnight.

  7. On Rosh Hashanah, remove the crockpot insert from the heating element before you open it and serve.

Farfel: Put the Past Behind You

The Talmud says that Shabbos is “a semblance of Olam Haba,” a taste of the delight of the World to Come. Certainly, this refers to something that is incomparably greater than the physical delights we experience.

The Midrash cites the phrase in Genesis (2:1): “And the heaven and earth were completed,” and comments that it is with the onset of Shabbos everything in Creation had been completed and not even the slightest thing was lacking, so should a person feel when Shabbos arrives: everything is complete, there is nothing lacking. There is not the slightest carryover of concern from the previous week. Nothing in one’s life is lacking, not even the slightest thing, just as G-d’s creation was totally complete.

We may have some difficulty in imagining so blissful a state, but if we could achieve it, it would indeed be “a semblance of Olam Haba.” Our minds would then be free for total devotion to spiritual pursuits.

Although a person should always have an attitude of teshuvah, Shabbos is a particularly favorable time for forgiveness. The Talmud says that if a person observes Shabbos properly, all his sins are forgiven (Koheles Rabbah 4). Inasmuch as a person receives an additional soul (neshamah yeseirah) on Shabbos, it is appropriate that one cleanse oneself of all one’s wrongdoings in preparation for this enhanced kedushah (holiness).

To assist in experiencing this heavenly feeling, a farfel stuffing was served on Friday night, and would be referred to it as “Teshuvah Farfel.” The Yiddish word farfallen means “it is in the past, over and done with.” As the farfel stuffing was served, people would say, “Whatever was until now is farfallen,” as a reminder that we should now put the entire past behind us and not bring any concerns of the workweek into Shabbos.

In this month before Rosh Hashanah, let us hope that all can do teshuvah and be forgiven of sins. Each Shabbos brings the hope that all is farfallen – it is in the past, over and done with – so each week we start anew.

Forgiveness Food

Teshuvah Farfel Stuffing

INGREDIENTS

2 large onions, diced

½ pound mushrooms, sliced

3-4 table spoons olive oil or shamltz

garlic cloves, minced

½ teaspoon turmeric

2 celery ribs, thinly sliced

1 teaspoon cumin

1 pound matzo farfel

1 tablespoons fresh oregano

2 cups chicken broth/vegetable broth

1 teaspoon rubbed sage

2 eggs

1 teaspoon paprika

Kosher salt

¼ teaspoon pepper

Freshly ground black pepper

PREPARATION

1. Preheat oven to 350°F. Grease a 9 x 13inch casserole dish.

2. Sauté onions in a large sauté pan lightly coated olive oil/shmaltz, over medium-high heat, until medium brown and very soft.

3. Add mushrooms to the pan and a bit more olive oil/shmaltz. Add spices and continue to sauté

4. Add celery and garlic to the pan and continue to cook for 3 to 5 minutes until celery begins to soften.

5. Transfer vegetables to greased pan. Add matzo farfel, broth, and slightly beaten eggs. Stir to combine. Cover with foil and bake at 350°F for 30 minutes. Uncover and bake 15 minutes more until lightly browned, or cool completely and freeze for up to 1 month.
